Cannery

Inside The Cannery at Pinckney Commonwealth

Preserving the Harvest, Elevating the Flavor

At the Pinckney Commonwealth Campus, sustainability means letting nothing go to waste. The Cannery is our state-of-the-art preservation facility where the peak-season abundance of The Gardens and The Fishery is transformed into premium, shelf-stable culinary goods.

Far from a traditional processing plant, our Cannery is a creative culinary hub. Here, we combine time-honored preservation techniques with modern food science to create unique, artisanal canned goods and signature original sauces that capture the vibrant flavors of our Michigan campus year-round.

Our Signature Product Lines

Every jar and bottle from The Cannery tells the story of our circular ecosystem. Crafted in small batches with zero artificial preservatives, our goods are produced for local retail, regional restaurants, and individual kitchens.

🍅 Original Signature Sauces

  • Farmhouse Garden Marinara: A rich, slow-simmered heirloom tomato sauce infused with fresh sweet basil and garlic plucked straight from our greenhouses.
  • Commonwealth Smoked Pepper Hot Sauce: A fiery, complex sauce featuring a blend of estate-grown chili peppers, naturally smoked over local hardwoods.
  • Sweet & Tangy Ag-Roots BBQ: A robust, honey-sweetened barbecue sauce utilizing our own root vegetables and spices for a uniquely deep flavor profile.

🥒 Artisanal Canned Goods

  • Estate Pickles & Relishes: From classic crisp dill spears to sweet-and-spicy relish blends, our cucumbers are jarred within hours of harvest to lock in the perfect crunch.
  • Preserved Greenhouse Tomatoes: Whole-peeled and crushed heirloom tomatoes, capturing the absolute peak of summer sweetness to elevate winter cooking.
  • Seasonal Fruit Compotes & Jams: Small-batch spreads featuring campus-grown berries and orchard fruits, lightly sweetened to let the natural fruit shine.

The Cannery Mission: A Circular Economy

The Cannery plays a vital role in our campus-wide mission. By processing surplus harvests, we drastically reduce food waste, stabilize the local food supply chain, and ensure that nutritious, estate-grown food is accessible even during the depth of a Michigan winter.

Furthermore, as a branch of The Learning Center, The Cannery serves as an active classroom where students and community members learn the rigorous science of safe commercial food processing, thermal preservation, and craft fermentation.

Taste the Commonwealth: Look for our signature labels at local Michigan retailers, experience them integrated into the menus of our partner restaurants, or stock your own pantry directly by visiting the campus during our quarterly Seasonal Festivals!
